Ingredients

  • 1 fresh baguette
  • 1/2 cup pesto, homemade or store bought
  • Fresh basil leaves, torn
  • Fresh whole tomatoes, sliced
  • Salt and pepper to taste
  • 1/3 cup goat cheese, crumbled
  • olive oil
  • balsamic vinegar

Instructions

  1. Preheat oven to 400
  2. Slice the baguette in half lengthwise and the into 4 pieces.
  3. Spread the baguette with the pesto, add the basil and tomato slices, add salt and pepper and top with goat cheese.
  4. Place in the oven for 8-10 minutes or until the goat cheese has melted.
  5. Remove from the oven and drizzle with olive oil and balsamic vinegar, serve warm.
