- 1 fresh baguette
- 1/2 cup pesto, homemade or store bought
- Fresh basil leaves, torn
- Fresh whole tomatoes, sliced
- Salt and pepper to taste
- 1/3 cup goat cheese, crumbled
- olive oil
- balsamic vinegar
Instructions
- Preheat oven to 400
- Slice the baguette in half lengthwise and the into 4 pieces.
- Spread the baguette with the pesto, add the basil and tomato slices, add salt and pepper and top with goat cheese.
- Place in the oven for 8-10 minutes or until the goat cheese has melted.
- Remove from the oven and drizzle with olive oil and balsamic vinegar, serve warm.
