Ingredients

Meatloaf

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 2 clove garlic, minced
  • 1/4 cup green onions, diced
  • 1/2 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1/2 cup ketchup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dry mustard
  • 1 egg
  • 1 cup rolled oats

Meatloaf Sauce

  • 1 tbsp butter
  • 1/2 cup sugar
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1/8 tsp dry mustard

Instructions

  1. Preheat oven to 350 degrees F
  2. Line a loaf pan with parchment paper leaving an overhang on both ends. These “handles” will make it easy to remove the loaf from the pan.
  3. In a medium size bowl, mix all ingredients until well incorporated then press into the loaf pan.
  4. Bake for 40 minutes.
  5. Meanwhile prepare the topping; melt the butter, add the brown sugar and allow caramelizing, add the ketchup, vinegar, and dry mustard, whisk and set aside.
  6. Remove the meatloaf from oven and drain the liquid, top with the meatloaf sauce and place back in the oven for 15 minutes, remove from the oven and allow to sit for 15 minutes, giving the juices time to be absorbed and allowing the loaf to firm up.
  7. Run a knife along the sides and lift the loaf out of the pan and onto a cutting board.
  8. Slice and serve.
