Ooey Gooey Haddock

This dish is over the top delicious! Rich, decadent cream cheese gently wrapping itself around succulent snow crab stuffed inside of fresh, light haddock and if that wasn’t enough we topped it with velvety hollandaise sauce. This is also the most decadent keto friendly meal you didn’t know you could have!

Ingredients

Units Scale
  • 4 4oz fillets of haddock
  • 8 oz cream cheese, room temperature
  • 3 tbsp olive oil, divided
  • 3 green onions, chopped
  • 2 tbsp red onion, minced.
  • 6 chives, finely chopped
  • 1 oz grated parmesan cheese
  • zest of 1 lemon
  • 8 oz snow crab meat
  • 1 cup blender hollandaise sauce ( recipe here)

Instructions

  1. Preheat the oven to 350 and line a half pan with parchment paper.
  2. Lay out the haddock fillets and pat them dry, set aside.
  3. Place the cream cheese in a bowl and begin to cream with a fork, ad 1 tbsp olive oil, green onions, red onions, parmesan cheese and lemon zest, continue to mix until everything is incorporated, Fold in the snow crab meat.
  4. Divide the mixture between the four haddock fillets roll and place seam side down on the baking sheet.
  5. Drizzle with the remaining olive oil.
  6. Bake for 15-20 minutes.
  7. While the fish is baking prepare the hollandaise sauce. ( recipe below)
  8. To serve plate the haddock and top with 1/4th of  the hollandaise sauce.

Blender Hollandaise Sauce

Place 6 egg yolks into a blender, turn it on low and run until the yolks begin to thicken, slowly drizzle in 1 cup of melted butter, add a pinch of cayenne pepper and the juice of 1 lemon, emulsify until thick and glossy.
