Coconut Lime Rice
- Yield: Serves 2-4 1x
Ingredients
- 1 cup basmati rice
- 1 tbsp coconut oil
- 1 tsp butter
- 1/4 cup shredded coconut
- 1 lime, zested and juiced
- 1 cup full fat coconut milk
- 1 cup chicken broth
- 1/2 tsp salt
Instructions
- Rinse the rice and let the water drain away.
- place the coconut oil and butter into a medium sized pot.
- Add the rice and the coconut, cook, stirring for 3-4 minutes.
- Add the lime zest and juice, coconut milk and chicken broth. mix well and bring to a slow boil.
- Reduce the heat and simmer for 12-18 minutes 0r until all of the liquid has been absorbed.
- Remove from heat and let sit for 5 minutes.
- Fluff, add salt and serve.

Help! I was ready to make this but there is no mention in the ingredients or instructions about the cilantro. It is in the title! Did I miss something?
My husband and I love this rice recipe! We love and miss this Caribbean, and this takes us back there immediately! Every time I start testing or juicing lime, my husband gets a whiff and says: “Mmmmm, Monserrat!”. Most recently we made this to accompany Maple Coconut Seared Salmon (also a recipe of Alain’s on this site). They were perfect and so delicious together. Highly recommend! This rice recipe is now a staple in our recipe rotation.
