Ingredients

  • 1 cup basmati rice
  • 1 tbsp coconut oil
  • 1 tsp butter
  • 1/4 cup shredded coconut
  • 1 lime, zested and juiced
  • 1 cup full fat coconut milk
  • 1 cup chicken broth
  • 1/2 tsp salt

Instructions

  1. Rinse the rice and let the water drain away.
  2. place the coconut oil and butter into a medium sized pot.
  3. Add the rice and the coconut, cook, stirring for 3-4 minutes.
  4. Add the lime zest and juice, coconut milk and chicken broth. mix well and bring to a slow boil.
  5. Reduce the heat and simmer for 12-18 minutes 0r until all of the liquid has been absorbed.
  6. Remove from heat and let sit for 5 minutes.
  7. Fluff, add salt and serve.
