Ingredients
Banana Layer Cake
- 3/4 cup vegetable oil
- 4 large eggs, room temperature
- 3 cups flour
- 2 cups white sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/8 tsp cardamom
- 1 cup mashed banana
- 1 tsp vanilla
Peanut Butter Frosting
- 1 1/2 cups smooth peanut butter
- 1 cup butter, room temperature
- 1 tsp vanilla
- 1 1/2 – 1 3/4 cups icing sugar
Instructions
- Preheat oven to 350F
- Spray three 9 inch baking pans and line with parchment paper.
- Combine vegetable oil and eggs and beat until frothy.
- In a separate bowl combine the flour, sugar, baking soda, cinnamon, saly, nutmeg and cardamom.
- Add the egg and oil mixture and mix just until combined.
- Carefully mix in the banana and vanilla.
- Divide between the three pans, bake for 25-30 minutes until golden.
- Meanwhile prepare the frosting by creaming the peanut butter and butter together, slowly add in the icing sugar 1/3 cup at a time, continue just until the icing is smooth and spreadable.
- Remove the cake from the oven, cool completely, divide the icing between the three layers.
