Maple and Wild Blueberry Coffee Cake

Ingredients

STREUSEL

  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup chopped pecans
  • 1/2 tsp cinnamon
  • 3 tbsp butter, melted

COFFEE CAKE

  • 2 cups flour
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 2 large eggs. beaten
  • 1 tsp maple extract
  • 1 cup sour cream
  • 1 cup frozen wild blueberries dusted with flour

TOPPING

  • 1/2 cup icing sugar
  • 2 tbsp maple syrup

 


Instructions

  1. Preheat oven 350. Buter an 8X8 baking dish and line with parchment. Set aside.
  2. In a small bowl combine the streusel ingredients and set aside.
  3. Prepare the cake batter by combining the dry ingredients  in a bowl, mix well.
  4. Make a well in the center and add the wet ingredients, Gently stir to combine.
  5. Carefully fold in the wild blueberries.
  6. Place half of the batter in the prepared pan and top with half of the stresel, add the remaining batter. and top with the remaining streusel.
  7. Bake for 45-60 minutes or until a toothpick inserted in the center comes out clean. Let cool.
  8. Combine the icing sugar and the maple, drizzle over top of the cake.
