Banana Layer Cake with Peanut Butter Frosting

Banana Layer Cake

  • 3/4 cup vegetable oil
  • 4 large eggs, room temperature
  • 3 cups flour
  • 2 cups white sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/8 tsp cardamom
  • 1 cup mashed banana
  • 1 tsp vanilla

Peanut Butter Frosting

  • 1 1/2 cups smooth peanut butter
  • 1 cup butter, room temperature
  • 1 tsp vanilla
  • 1 1/21 3/4 cups icing sugar

 


Instructions

  1. Preheat oven to 350F
  2. Spray three 9 inch baking pans and line with parchment paper.
  3. Combine vegetable oil and eggs and beat until frothy.
  4. In a separate bowl combine the flour, sugar, baking soda, cinnamon, saly, nutmeg and cardamom.
  5. Add the egg and oil mixture and mix just until combined.
  6. Carefully mix in the banana and vanilla.
  7. Divide between the three pans, bake for 25-30 minutes until golden.
  8. Meanwhile prepare the frosting by creaming the peanut butter and butter together, slowly add in the icing sugar 1/3 cup at a time, continue just until the icing is smooth and spreadable.
  9. Remove the cake from the oven, cool completely, divide the icing between the three layers.
