Acadian Cajun Peanut Butter Pie

Ingredients

Graham Cracker Crust

  • 1 sleeve of graham crackers
  • 2 tbsp brown sugar
  • 6 Tbsp butter, melted
  1. Place graham crackers into a food processor and pulse to make crumbs, add brown sugar and melted butter and pulse until all the ingredients come together.
  2. Press into a glass pie plate. Refrigerate for 1 hour.

 Pie Filling

  • 2 cups smooth peanut butter
  • 8 oz. package of cream cheese
  • 1 1/2 cups icing sugar, divided
  • 3 tsp vanilla extract
  • 1 1/2 cups 35 % heavy cream, whipped with 1/2 cup icing sugar
  1. Place the peanut butter and cream cheese in the bowl of a stand mixer and mix until smooth, slowly add 1 cup of the icing sugar until incorporated, add the vanilla to the peanut butter mixture and mix until smooth.
  2. Gently fold in the whipped cream.
  3. Pour mixture into the prepared crust. Place back in the refrigerator for 30 minutes.

To Garnish your Pie

Melt 2 oz. of dark chocolate and 2 oz. of white chocolate and drizzle over the pie and sprinkle with chopped Turtle chocolates.

Or

Drizzle with chocolate sauce and add chopped peanuts.
