Veggie Packed Pasta
- Yield: Serves 2
Ingredients
- 2 tbsp olive oil
- 1/2 cup chopped mushrooms
- 1/4 cup chopped onions
- 1/4 cup diced red peppers
- 4 cherry tomatoes, halved
- 1 Tbsp minced garlic
- 1/2 tsp chili flakes
- 3 tbsp. sweet Chili
- 1 tbsp basil pesto
- 1 lg handful of spinach
- 2 cups cooked pasta, we used spaghetti
- 1/4 cup – 1/3 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/3 cup crumbled feta cheese
Instructions
- Heat the olive oil in a large saute pan.
- Add the mushrooms, onion, red peppers, cherry tomatoes, garlic and chili flakes, saute until the vegetables are warmed through but not too soft.
- Stir in the sweet Chili and basil pesto.
- Add the spinach and cook until slightly wilted.
- Toss in the pasta and heat through.
- Add the cream and parmesan cheese, heat through.
- Finish with the feta cheese.
