Steak Hoagies That Call for Extra Napkins

Oui! Chef Season 5 Episode 11

This is the kind of sandwich you lean over the plate for. Tender steak, mushrooms and onions, melted mozzarella and a creamy chipotle honey sauce, all tucked into a warm hoagie bun. It’s generous, a little messy and a very good reason to bring your appetite. Have a few extra napkins handy!

A good steak sandwich needs a filling that’s worth getting excited about, and the mushrooms and onions do plenty of the heavy lifting here. The onions bring sweetness, while the mushrooms have that earthy, savoury flavour that works so well with beef. They soak up those rich pan juices and make every bite a little better. You want a forkful of that mixture before it even gets near the bread.

Our Bad Ass Burger Booster gives the steak a good punch of flavour. It’s a handy seasoning to have around when you’re putting together a hearty supper like this, and it works beautifully with the mushrooms and onions, too. There’s plenty going on in this sandwich, so having that well-seasoned beef at the center of it makes a difference.

Then there’s the Some Like It Hot Mustard. I like a little bite in a rich sandwich, and that mustard brings just the right attitude. Along with the mayonnaise, it gives the bun a creamy, tangy layer that you’ll notice even with all that filling piled in. Use as much heat as you enjoy. You’re the one eating it!

Mozzarella is a good fit here because it melts right down into the steak and vegetables, giving you those lovely stretchy bites. And don’t overlook the bun. It needs enough substance to hold everything together while still being comfortable to bite through. A warm hoagie bun with a soft middle gives those savoury juices somewhere to settle.

The chipotle honey sauce deserves a little attention of its own. It’s creamy, smoky and sweet, with a bit of lemon to brighten things up. That smoky warmth works particularly well with the beef, and the honey rounds out the heat. Once it’s drizzled over the melted cheese, you’ve got a sandwich with plenty of personality. Fair warning: any fries on your plate will probably end up in that sauce as well.

I’d serve these with a crunchy slaw, a few good pickles or a pile of fries, depending on the appetite around the table. Something crisp and tangy alongside all that steak and cheese is always welcome. It’s a hearty supper for a chilly evening, especially when everyone’s hungry and ready to sit down together.

Pull up a chair, keep your plate close and dig in. We can worry about the napkins afterwards.

Description

Makes 2 generously filled hoagies

Ingredients

Units Scale
  • 8 oz steak, thinly sliced
  • Bad Ass Burger Booster, to taste
  • 2 tbsp olive oil, divided
  • 2 onions, julienned
  • 8 oz button mushrooms, sliced
  • 1 clove garlic, chopped
  • 1 cup beef broth
  • 2 hoagie buns
  • Mayonnaise, to taste
  • Some Like It Hot Mustard, to taste
  • 1 cup shredded mozzarella cheese
  • Chipotle Honey Sauce
  • 1 cup mayonnaise
  • 1/4 cup honey
  • Juice of 1/2 lemon
  • 2 tbsp chipotle Tabasco sauce
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Season the thinly sliced steak with Bad Ass Burger Booster. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Quickly sear the steak, keeping it medium rare, then transfer to a plate.
  3. Add the remaining olive oil to the skillet along with the onions and mushrooms. Sauté until softened and lightly golden. Stir in the garlic and cook for another 30 seconds.
  4. Add the beef broth, scraping up any browned bits from the bottom of the skillet. Simmer until the broth has reduced and no liquid is pooling in the pan. Return the steak and any resting juices to the skillet, toss briefly to combine, then remove from the heat.
  5. Cut a V-shaped wedge along the top of each hoagie bun, leaving the bottom intact. Spread the inside with mayonnaise and Some Like It Hot Mustard to your liking.
  6. Divide the steak, mushroom and onion mixture between the buns. Top with the mozzarella and place on the prepared baking sheet. Bake for 3–5 minutes, or until the cheese has melted.
  7. Meanwhile, make the chipotle honey sauce by whisking together the mayonnaise, honey, lemon juice and chipotle Tabasco. Season with salt and pepper to taste.
  8. Remove the hoagies from the oven, drizzle with chipotle honey sauce to your liking and serve immediately.
