A Fresh Twist on Caprese, Perfect for Asparagus Season

There is something about asparagus that feels like a proper welcome to fresh-season cooking. It is bright, crisp, earthy, and just fancy enough to make any meal feel a little more special without requiring a lot of fuss.

This Caprese-inspired asparagus dish takes everything people love about the classic combination of tomato, mozzarella, basil, and balsamic and gives it a warm, roasted twist. Instead of serving those familiar flavours cold on a plate, this version lets the oven do the heavy lifting. The asparagus becomes tender while still holding a little bite, the tomatoes soften and release their sweetness, and the mozzarella melts into the kind of golden, bubbling topping that makes everyone lean a little closer to the table.

What makes this dish really shine is the balance. You get the freshness of the basil, the richness of the cheese, the natural sweetness of roasted tomatoes, and that tangy-sweet finish from balsamic reduction. It is simple, colourful, and full of flavour without being overworked.

This is the kind of side dish that works just as well for a weeknight supper as it does for company. Serve it alongside grilled chicken, steak, seafood, or even as part of a brunch spread. It brings colour to the plate and has that “I put in effort” look, even though it is wonderfully straightforward.

It is also a great reminder that vegetables do not have to be boring. With the right toppings and a little heat, asparagus can easily become the star of the meal. The Caprese flavours make it familiar, but the roasted presentation gives it something new.

Fresh, cheesy, vibrant, and finished with a glossy drizzle of balsamic, this is asparagus dressed up in its Sunday best.

Ingredients

Units Scale
  • 1 lb asparagus, woody ends trimmed
  • Extra-virgin olive oil, for drizzling
  • 1 pinch Italian seasoning
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cups shredded mozzarella
  • 2 cups cherry tomatoes, halved
  • balsamic reduction
  • Fresh basil, thinly sliced, for finishing

Instructions

  1. Preheat the oven to 425°F.
  2. Place the asparagus on one side of a large baking sheet. Drizzle with olive oil, then season with Italian seasoning, salt, and pepper. Toss lightly to coat, then arrange the asparagus in an even layer. Scatter the mozzarella over the asparagus.
  3. On the other side of the baking sheet, add the cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Roast for about 18 to 20 minutes, or until the asparagus is tender, the tomatoes have softened, and the cheese is melted and lightly bubbling.
  4. Transfer the cheesy asparagus to a serving platter. Spoon the roasted tomatoes over top, drizzle with the balsamic reduction, and finish with fresh basil.
  5. Serve warm.
