But here’s where we put a campfire spin on the beloved BLT. Instead of sizzling bacon in a pan, we toss it onto the grill. The bacon sizzles and crackles, infusing it with a rustic, charred goodness that perfectly complements the setting.

But we don’t stop there. We also grill thick slices of tomatoes, enhancing their natural sweetness and lending a smoky depth to their flavor profile. The combination of smoky bacon and grilled tomatoes creates a dynamic duo of flavors that burst with each bite.

Tony’s Summer Style Grilled BLT with Citrus Aioli

Ingredients

  • 1/2 cup mayonnaise
  • juice of 1/2 lemon
  • juice of 1/2 lime
  • 2 sprigs thyme, leaves removed
  • 1 tbsp chopped chives
  • 1 tbsp Some Like It Hot mustard ( or mustard of your choice)
  • 1/2 tsp salt
  • 1/4 tsp pepper olive oil
  • 6 slices of Tony’s bacon
  • 2 tomatoes, thickly sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 pieces of naan
  • Bib lettuce

Instructions

  1. Heat grill to 350.
  2. Combine the mayonnaise, lemon and lime juice, thyme, chopped chives,  mustard, salt and pepper, mix well and refrigerate until needed.
  3. Place the bacon in a cast iron skillet and cook until crisp, remove and set aside.
  4. Drizzle the tomatoes with olive oil, and season with salt and pepper, grill until heated through.
  5. Drizzle the naan with olive oil and grill until warm.
  6. Cut the naan in half, spread one half with he citrus aioli, add lettuce , tomato and bacon, top with the second piece of naan.
