Ingredients
- Cooking spray
- 1 8 inch tortilla
- 3 large eggs
- 1/3 cup cottage cheese
- salt to taste
- pepper to taste
- 1/4 cup cherry tomatoes
- 1/4 cup chopped green peppers
- 1 handful chopped spinach
- 1/4 cup feta cheese
Instructions
- Preheat the oven to 350
- Spray an 8″ pie plate with cooking spray.
- Lay the tortilla in the plate.
- Mix the eggs, cottage cheese, salt and pepper together and gently pour over the tortilla.
- Top with the tomatoes, green peppers, and spinach, lastly top with the feta.
- Place in the oven and bake for 20-25 minutes.
- Let cool for a few minutes then cut into wedges.
