Mediterranean Breakfast Tortillas

Ingredients

  • Cooking spray
  • 1 8 inch tortilla
  • 3 large eggs
  • 1/3 cup cottage cheese
  • salt to taste
  • pepper to taste
  • 1/4 cup cherry tomatoes
  • 1/4 cup chopped green peppers
  • 1 handful chopped spinach
  • 1/4 cup feta cheese

Instructions

  1. Preheat the oven to 350
  2. Spray an 8″ pie plate with cooking spray.
  3. Lay the tortilla in the plate.
  4. Mix the eggs, cottage cheese, salt and pepper together and gently pour over the tortilla.
  5. Top with the tomatoes, green peppers,  and spinach, lastly top with the feta.
  6. Place in the oven and bake for 20-25 minutes.
  7. Let cool for a few minutes then cut into wedges.
