STREUSEL
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup chopped pecans
- 1/2 tsp cinnamon
- 3 tbsp butter, melted
COFFEE CAKE
- 2 cups flour
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup maple syrup
- 1/2 cup vegetable oil
- 1/4 cup milk
- 2 large eggs. beaten
- 1 tsp maple extract
- 1 cup sour cream
- 1 cup frozen wild blueberries dusted with flour
TOPPING
- 1/2 cup icing sugar
- 2 tbsp maple syrup
Instructions
- Preheat oven 350. Buter an 8X8 baking dish and line with parchment. Set aside.
- In a small bowl combine the streusel ingredients and set aside.
- Prepare the cake batter by combining the dry ingredients in a bowl, mix well.
- Make a well in the center and add the wet ingredients, Gently stir to combine.
- Carefully fold in the wild blueberries.
- Place half of the batter in the prepared pan and top with half of the stresel, add the remaining batter. and top with the remaining streusel.
- Bake for 45-60 minutes or until a toothpick inserted in the center comes out clean. Let cool.
- Combine the icing sugar and the maple, drizzle over top of the cake.
