Lobster And Smoked Salmon Pizza

Lobster And Smoked Salmon Pizza

Description

This recipe will work with any type of shellfish such as scallops or shrimp and it is also delicious made with chicken as well!


Ingredients

Units Scale
  • 1/2 lb lobster meat
  • 115g cold smoked salmon
  • 3 green onions, chopped
  • 1 1/2 tbsp all purpose flour
  • 1/4 cup white wine
  • 1 cup 35% cream
  • 1/2 cup powdered parmesan cheese
  • 1/2 tsp black pepper
  • Prepared Pizza Dough
  • Cornmeal
  • 1/4 of a red onion, thinly sliced
  • 1 tbsp capers, drained
  • 1/2 oz fresh grated parmesan cheese
  • 1 oz shredded asiago cheese

Instructions

  1. Place a pizza stone in the oven and preheat to 500F
  2. Melt the butter in a medium sized sauté pan.
  3. Add the garlic, green onion, and half the lobster meat, cook for 3-4 minutes.
  4. Add the flour and cook stirring continuously until the flour begins to turn a pale yellow color.
  5. Deglaze the pan with the white wine.
  6. Add the heavy cream and heat through.
  7. Add the powdered parmesan cheese and the black pepper, stir until the cheese melts.
  8. Remove from the heat and allow to cool.
  9. Sprinkle a piece of parchment paper with cornmeal.
  10. Roll the pizza dough out into a 14″ circle ( form a heart for a valentines day extra)
  11. Spread with the cooled sauce.
  12. Add the remaining lobster meat, salmon, red onion, and capers.
  13. Top with the parmesan and asiago cheese.
  14. Slide the pizza onto the pizza stone and bake for 15 minutes.
