Ingredients

Units Scale
  • 2 cups cooked couscous ( quinoa, rice or any other cooked grain)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Zest of 1/2 lime
  • Juice of 1/2 lime
  • 2 tbsp chopped dill ( or herb of choice)

Instructions

  1. Bring the cooked couscous to room temperature.
  2. Heat the olive oil in a saute plan, add the garlic and lemon zest and saute just until the garlic begins to turn golden.
  3. Add the couscous and het through, add the chopped dill and lime juice, heat through and serve.
