Celery Parmesan Salad: Proof That Simplicity Wins
This salad exists to remind cooks of something we all forget from time to time: when ingredients are right, you don’t need tricks. No heat. No foam. No unnecessary garnish doing gymnastics on the plate. Just sharp, fresh flavors handled with respect.
Celery gets a bad reputation as filler, but sliced thin on the bias it becomes crisp, aromatic, and refreshing. Pair that crunch with real Parmigiano-Reggiano, toasted nuts, good olive oil, and lemon, and suddenly you’ve got a salad that feels intentional instead of apologetic.

This is the kind of dish that works anywhere — as a first course, alongside grilled fish, or dropped into a larger spread when you need something that cuts through richness. It wakes up the palate. It does its job.
The lemon brings brightness, the shallot adds quiet bite, and the cheese does what Parmesan always does when it’s treated properly: depth, salt, and umami without shouting. Toasted walnuts (or almonds if that’s what you’ve got) add just enough richness to round things out.

The key here is restraint. Don’t drown it. Don’t overwork it. This salad should feel light in the bowl and confident on the plate.
For service, keep it tight and deliberate. Chill the plates, mound the salad slightly off-center, and layer the Parmesan ribbons for height and movement. A few celery leaves or parsley aren’t decoration — they’re a reminder of what you’re eating.
