- 2 cups cooked couscous ( quinoa, rice or any other cooked grain)
- 1 tbsp olive oil
- 1 clove garlic, minced
- Zest of 1/2 lime
- Juice of 1/2 lime
- 2 tbsp chopped dill ( or herb of choice)
Instructions
- Bring the cooked couscous to room temperature.
- Heat the olive oil in a saute plan, add the garlic and lemon zest and saute just until the garlic begins to turn golden.
- Add the couscous and het through, add the chopped dill and lime juice, heat through and serve.
