Potato Ingredients

  • 3 russet potatoes
  • 2 tbsp olive oil
  • Sea salt
  • Oil for shallow frying
  • Cheese Sauce ( Recipe below)
  • Bacon Bits

Cheese Sauce Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups cheddar cheese
  • Salt and pepper to taste

Toppings

  • Sour Cream
  • Green Onions

 


Instructions

 

Prepare The Potatoes

  1. Pre-heat your oven to 350F.
  2. Rub the potatoes in olive oil and place on a baking sheet.
  3. Sprinkle with the sea salt and bake for 1 hour, until golden and crispy.
  4. Remove from oven and bring to room temperature.
  5. Once cooled, remove the inside of the potato using a spoon, leaving ¼ inch from the skin.

Prepare The Cheese Sauce

  1. Melt butter in a saucepan.
  2. Whisk in flour and cook until golden.
  3. Add milk and stir until thickened.
  4. Stir in cheese until melted.
  5. Season with salt and pepper to taste.
  6. Set Aside

Back To The Potatoes

  1. Add two inches of oil to a pan and fry the potato skins until golden.
  2. Fill potato with cheese sauce and top with bacon bits.
  3. Bake in a 350F oven on a baking pan until cheese is melted.
  4. Top with bacon bits, sour cream and green onions to serve.
