Ingredients

Units Scale
  • 1 tray Asiago Potato Cuisine, cooked
  • 4 slices of crispy cooked bacon
  • 1 cup shredded lettuce
  • 1/2 cup cherry tomatoes diced
  • 2 grilled chicken breasts sliced
  • 1/2 cup creamy cheddar dressing (recipe below)
  • 1/4 cup croutons
  1. Place W.P Griffin Asiago Sundried Potatoes in the microwave for 6 minutes, let rest for 2 minutes, carefully remove the film ,transfer to a bowl and add butter and the seasoning package.
  2. Divide the potatoes between 2 dinner sized bowls.
  3. Slice the chicken breasts and place centered on top of the potatoes.
  4. Place lettuce and tomato on one side of the chicken and the bacon on the other side.
  5. Top and finish with the creamy cheddar dressing, add a few croutons.

Creamy Cheddar Dressing

  • 1/3 cup sour cream
  • 1/4 cup old cheddar
  • 1 tbsp chopped green onions
  • 1 tsp fresh lime juice
  • 1 tsp mayonnaise
  1. Combine all ingredients in a med size bowl and refrigerate till ready to use

 

Grilled Chicken Breasts

Drizzle some olive oil over the chicken and season with salt and pepper. Grill on BBQ on medium heat until it reaches an internal temperature of 168°F. Let sit and slice.
