Lobster Melt

Ingredients

  • 8 slices bread of your choice ( we used ciabatta buns)
  • 8 ox cream cheese, room temp
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley
  • 1/4 cup lobster brine ( sub 2 tbsp lemon or lime juice if you don’t have brine)
  • 1 lb lobster meat
  • 1 ounce grated parmesan cheese divided
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 tomatoes sliced
  • 24 ounces shredded Monterey Jack
  • olive oil for drizzling
  • chives for garnish

Instructions

  1. Preheat BBQ or oven to 350.
  2. Place the cream cheese, sour cream and mayonnaise in a bowl, use a hand mixer to beat smooth.
  3. Fold in the herbs, lobster brine, lobster meat, 1/2 of the grated parmesan, salt and pepper.
  4. Drizzle the bread or buns with olive oil and place in the oven or on the BBQ to toast.
  5. Remove and spread with the lobster mixture, top with tomatoes, Monterey Jack and remaining parmesan.
  6. Place in the oven or on the BBQ and leave until the filling is warmed through and the cheese has melted.
  7. Remove, add another drizzle of olive oil and more fresh cracked pepper.
