- Yield: Serves 4
Ingredients
- 8 slices bread of your choice ( we used ciabatta buns)
- 8 ox cream cheese, room temp
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp chopped chives
- 2 tbsp chopped parsley
- 1/4 cup lobster brine ( sub 2 tbsp lemon or lime juice if you don’t have brine)
- 1 lb lobster meat
- 1 ounce grated parmesan cheese divided
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 tomatoes sliced
- 24 ounces shredded Monterey Jack
- olive oil for drizzling
- chives for garnish
Instructions
- Preheat BBQ or oven to 350.
- Place the cream cheese, sour cream and mayonnaise in a bowl, use a hand mixer to beat smooth.
- Fold in the herbs, lobster brine, lobster meat, 1/2 of the grated parmesan, salt and pepper.
- Drizzle the bread or buns with olive oil and place in the oven or on the BBQ to toast.
- Remove and spread with the lobster mixture, top with tomatoes, Monterey Jack and remaining parmesan.
- Place in the oven or on the BBQ and leave until the filling is warmed through and the cheese has melted.
- Remove, add another drizzle of olive oil and more fresh cracked pepper.
