Sweet Potato and Black Bean Breakfast Burritos

Ingredients

  • 6 8 -inch whole wheat tortillas
  • 3 medium sweet potatoes
  • 1 15 ounce cans black beans, drained and rinsed
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • juice of 1 lime
  • few dashes of hot sauce
  • 6 large eggs
  • 1/4 cup milk
  • 1 avocado, diced
  • 1/2 cup shredded cheddar
  • 1/3 cup enchilada sauce

Instructions

  1. Poke the sweet potatoes with a fork and place in the microwave, cook on high for 10-12 minutes or until fork tender. Remove from the microwave and separate the meat from the flesh, mash well and set aside.
  2. In a bowl combine the black beans, cumin, cayenne pepper, lime juice and hot sauce, mix well and set aside.
  3. Crack the eggs in a bowl, add the milk and blend well, scramble over medium heat until light and fluffy.
  4. Lay a tortilla flat, spread with sweet potato, add black beans, scrambled eggs, avocado, cheese and enchilada sauce, fold in the ends and roll.
  5. Place in a warn saute pan, seam side down and grill until golden brown.
