- 6 8 -inch whole wheat tortillas
- 3 medium sweet potatoes
- 1 15 ounce cans black beans, drained and rinsed
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- juice of 1 lime
- few dashes of hot sauce
- 6 large eggs
- 1/4 cup milk
- 1 avocado, diced
- 1/2 cup shredded cheddar
- 1/3 cup enchilada sauce
Instructions
- Poke the sweet potatoes with a fork and place in the microwave, cook on high for 10-12 minutes or until fork tender. Remove from the microwave and separate the meat from the flesh, mash well and set aside.
- In a bowl combine the black beans, cumin, cayenne pepper, lime juice and hot sauce, mix well and set aside.
- Crack the eggs in a bowl, add the milk and blend well, scramble over medium heat until light and fluffy.
- Lay a tortilla flat, spread with sweet potato, add black beans, scrambled eggs, avocado, cheese and enchilada sauce, fold in the ends and roll.
- Place in a warn saute pan, seam side down and grill until golden brown.
