Steak and Mushroom Stuffed Sweet Potatoes

Description

  • 2 large sweet potatoes
  • 2 tbsp butter
  • 6 ounces beef tenderloin, cut into thin slivers
  • 1 lb brown mushrooms, sliced
  • 3 green onions, chopped
  • 1 tsp Badass Burger Booster
  • 1 cup beef broth
  • 2 tbsp all purpose flour
  • 1/2 cup grated parmesan cheese

Ingredients

  1. Preheat oven to 400
  2. Cut sweet potatoes in half lengthwise and scored. Bake until for tender, approx. 35-40 minutes.
  3. Melt the butter in a sauté pan,
  4. Add the beef and Badass Burger Booster and saute for 3-4 minutes.
  5. Add the mushrooms and the green onions and saute until the beef is fully cooked.
  6. Sprinkle the flour over the beef, mix and cook for 2-3 minutes, add the beef broth and cook until the mixture begins to thicken, stir in 2 tbsp of parm, stir to melt.
  7. Divide the beef mixture between the four sweet potatoes, top with the remaining parmesan and return to the oven and bake for 5-10 minutes or until the mixture is bubbling and the cheese has melted.
  8. Serve with sour cream.
