Description
- 2 large sweet potatoes
- 2 tbsp butter
- 6 ounces beef tenderloin, cut into thin slivers
- 1 lb brown mushrooms, sliced
- 3 green onions, chopped
- 1 tsp Badass Burger Booster
- 1 cup beef broth
- 2 tbsp all purpose flour
- 1/2 cup grated parmesan cheese
Ingredients
- Preheat oven to 400
- Cut sweet potatoes in half lengthwise and scored. Bake until for tender, approx. 35-40 minutes.
- Melt the butter in a sauté pan,
- Add the beef and Badass Burger Booster and saute for 3-4 minutes.
- Add the mushrooms and the green onions and saute until the beef is fully cooked.
- Sprinkle the flour over the beef, mix and cook for 2-3 minutes, add the beef broth and cook until the mixture begins to thicken, stir in 2 tbsp of parm, stir to melt.
- Divide the beef mixture between the four sweet potatoes, top with the remaining parmesan and return to the oven and bake for 5-10 minutes or until the mixture is bubbling and the cheese has melted.
- Serve with sour cream.
