Stained Glass Cookies

These cookies start with a basic sugar cookie recipe, but the addition of crushed candies gives them a special appeal. To crush the candies simple place in a Ziplock bag and break with a rolling pin, it’s best to have a dishtowel under the bag as the shards are sharp and could damage the counters surface.

Ingredients

  • 3/4 cup room temperature butter
  • 3/4 cup sugar
  • 1 room temperature egg
  • 2 tsp vanilla
  • 2 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 20 hard candies, crushed

Instructions

  1. Preheat oven to 350 and line a baking sheet with parchment paper.
  2. Place the butter and sugar into the bowl of a stand mixer and cream for 2 minutes on high scraping down the sides as you go.
  3. Add the vanilla and the egg and mix on low for 2 minutes.
  4. Combine the flour, baking powder and salt. Add to the creamed mixture and mix to combine.
  5. Remove the dough from the bowl, form into a disc and wrap with saran. Refrigerate for at least 1 hour.
  6. Remove the dough from the fridge and let warm up slightly, roll 1/2 the dough to a 1/4-inch thickness, cut desired shape and place on cookie sheet. Use a smaller cutter to remove the center.
  7. Place the crushed candies inside the opening, filling about 1/3 full.
  8. Bake for 12 minutes, allow to cool completely before removing from the tray.
