Rhubarb Gets Its Groove On: A Ginger-Lime Crisp for Spring
Rhubarb season always feels like the official start of brighter, fresher desserts. After months of heavier bakes and cozy winter flavors, rhubarb shows up with its bold colour, sharp tang, and old-fashioned charm. This Ginger-Lime Rhubarb Crisp is the kind of dessert that feels familiar, but with just enough of a twist to make it special.

The beauty of rhubarb is that it does not need much fussing. Its natural tartness is exactly what makes it shine, especially when balanced with a sweet, buttery topping and a little brightness from citrus. The ginger adds warmth without taking over, while the lime brings a fresh lift that keeps the whole dessert from feeling too heavy.
This crisp is a great choice for spring and early summer gatherings because it is casual, comforting, and easy to serve. It works just as well spooned warm into bowls after Sunday dinner as it does brought to a potluck or backyard meal. Add a scoop of vanilla ice cream, a spoonful of whipped cream, or serve it plain and let the rhubarb do the talking.

It can also be made gluten free, as long as you use certified gluten-free oats. Oats are naturally gluten free, but they are often processed in facilities that also handle wheat, so checking the label matters. With that simple swap, this dessert becomes a great option for anyone avoiding gluten without sacrificing the classic crisp texture.
What I love most about this rhubarb crisp is the balance. It is sweet, tart, buttery, bright, and just a little bit unexpected. The topping brings crunch, the filling turns soft and jammy, and every bite has that perfect mix of comfort and freshness.
This is the kind of dessert that belongs on the table when rhubarb is at its best. Simple, seasonal, and full of flavour.
