Individual Wild Blueberry Barbecue Crisp Packs: The Ultimate Campfire-Inspired Dessert

There is something undeniably special about finishing a summer meal with dessert straight from the barbecue. These Individual Wild Blueberry Barbecue Crisp Packs turn a familiar fruit crisp into a fun, interactive treat that feels right at home at backyard cookouts, cottage weekends and evenings around the campfire. Each guest gets their own warm foil packet filled with bubbling wild blueberries and a buttery oat topping, making serving simple and cleanup even easier.

Wild blueberries are the real star of this dessert. Their deep colour and bold, slightly tangy flavour become even more intense as they cook, creating a rich, jammy filling that balances beautifully with the sweet, crumbly topping. A touch of maple, lemon, vanilla and warm spice complements the berries without overpowering them, while optional pecans add another layer of crunch and a subtle toasted flavour.

Cooking the crisps in individual foil packets keeps the berries wonderfully juicy while allowing the topping to become golden and fragrant. It is also a practical way to prepare dessert outdoors without heating up the kitchen. The packets can be assembled ahead of time, placed on the barbecue after the main course comes off and served right in the foil for a relaxed, rustic presentation.

The real showstopper is the “campfire sundae” finish. Set out vanilla ice cream, crushed graham crackers, toasted marshmallows, warm maple syrup and a little fresh mint, then let everyone customize their own dessert. The marshmallows melt into the hot blueberries, the ice cream softens over the warm crisp and the graham crackers bring that unmistakable s’mores crunch. It is part wild blueberry crisp, part campfire sundae and exactly the kind of memorable dessert that keeps everyone gathered around the table a little longer.

Ingredients

Units Scale
Wild Blueberry Filling (per pack) Combine the following and set side.
  • 2/3 cup wild blueberries
  • 2 tsp brown sugar
  • 1 tsp maple syrup
  • 1/2 tsp cornstarch
  • 1/2 tsp lemon juice
  • Splash of vanilla
  • Pinch of cinnamon
  • Tiny pinch of salt
Crisp Topping (mix together for all 6)
  • 1 cup rolled oats
  • 2/3 cup flour
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup chopped pecans (optional but delicious)
Rub everything together until it resembles coarse crumbs. Assemble Cut six large squares of heavy-duty foil (about 12 x 12 inches). Lightly butter the center of each. Divide the blueberry filling evenly among the six packets. Top each with about ⅓ cup of crisp topping. Fold the foil into a well-sealed packet, leaving a little room for steam. Grill Barbecue at 375°F over indirect heat. Cook for 18–22 minutes, until the berries are bubbling. Open the packets for the last 3–5 minutes if you'd like the topping to crisp up a little more. "Campfire Sundae" Finish When each packet comes off the grill, let everyone finish their own: A scoop of vanilla ice cream Crushed graham crackers for extra crunch Toasted marshmallows (or mini marshmallows sprinkled on during the last few minutes of cooking) A drizzle of warm maple syrup Fresh mint, if you have it The toasted marshmallows melt into the warm blueberries while the ice cream cools everything down—it's like a cross between a blueberry crisp and a s'more. Given our recent conversations about wild blueberry desserts, I think this would be a real showstopper.
