German Style Snow Crab & Asparagus Potato Salad with Herb Dressing

When it comes to celebrating the bounty of Nova Scotia, there’s nothing quite like creating a dish that brings together the flavors of land and sea. This German-style potato salad — made with tender local potatoes, sweet Snow Crab from our Atlantic waters, and just-picked asparagus — is a tribute to everything we love about eating close to home. It’s fresh, hearty, and proudly Nova Scotian.

Instead of the traditional mayonnaise-heavy version, this salad leans into the bright, herbaceous flair of German cuisine. The base is built on boiled Nova Scotia potatoes, diced and ready to soak up a tangy, homemade herb dressing. We add blanched local asparagus — one of the first green signs of spring in our farmers’ markets — to bring a crisp texture and vibrant color. And then comes the showstopper: sweet, flaky Snow Crab, sustainably harvested from our coastal waters, folded gently into the mix.

The herb dressing ties it all together. Made with local olive oil alternatives or regionally sourced varieties, lemon juice or apple cider vinegar, a spoonful of deli mustard, and chopped fresh herbs like dill, parsley, or basil — it’s the kind of simple, honest flavor that lets the ingredients speak for themselves. Nothing overpowers; everything complements.

This dish is about more than just flavor — it’s about supporting our growers, harvesters, and producers. When you use Nova Scotia potatoes, asparagus from your local farm stand, and Snow Crab from a trusted fisher or fish market, you’re not just cooking — you’re investing in your community. That’s what being NS Loyal is all about.

Serve this chilled in small cups at a tasting table, as a light starter for a seafood-forward dinner, or as a hearty lunch that showcases our province’s best. It’s ideal for pop-ups, festivals, or anytime you want to serve a dish that’s deeply local, deeply satisfying, and impossible to forget.

Want to source ingredients for your next event or demo directly from Nova Scotia producers? Let’s talk — there’s a whole province of flavor waiting to be celebrated.
