Pickled Radishes: A Bright, Crunchy Accent for Any Plate
There are some recipes that prove a dish does not need to be complicated to be memorable. These pickled radishes are exactly that: sharp, sweet, salty, crisp, and ready in about half an hour.

This recipe was inspired by chef Sven-Ole Hastreiter, from the Hyatt Regency Mainz , shared as part of the Oui Chef class. It is a beautiful example of how a simple garnish can bring balance and brightness to a dish.

Pickled radishes are one of those little kitchen tricks that can completely wake up a plate. Their natural peppery bite softens slightly in the warm pickling liquid, while the vinegar, sugar, and salt create a clean sweet-and-sour finish.

The result is a crisp, vibrant garnish that works beautifully with rich meats, seafood, sandwiches, salads, grain bowls, or charcuterie.
The best part? You only need five ingredients and a few minutes of prep.

Chef’s Notes
For the best texture, slice the radishes as thinly as possible. A mandoline gives you even slices and helps the radishes pickle quickly.
These are delicious after 30 minutes, but they will continue to develop flavour as they sit. Store them covered in the refrigerator and use them within a few days for the best crunch and colour.
Serve them anywhere you need a little lift: tucked into tacos, scattered over smoked fish, spooned onto roasted meats, or added to a salad for colour and snap.
Simple, bright, and full of character — exactly the kind of garnish every cook should have in their back pocket.
