Parmesan Crusted Haddock
- Yield: Serves 2
Ingredients
- 2 8oz haddock fillets
- Olive oil for drizzling
- 1 cup panko
- 1 tsp Hot Under the Kilt Acadian Cajun seasoning ( substitute your favorite Cajun seasoning)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 heaping tbsp mayonnaise
- 1 ounce freshly grated parmesan cheese
- 2 green onions, chopped
- 1/2 of a fresh lime
Instructions
- Preheat oven to 450
- Line a baking sheet with parchment paper
- Place the haddock fillets on the pan and drizzle with the olive oil.
- Combine the remaining ingredients, except for lime, in a bowl.
- Spread half of the mixture onto each fillet and gently pat in down.
- Add another drizzle of olive oil to the top.
- Bake for 10 minutes.
- Remove from the oven and squeeze the lime over top.
