Mexican Salmon Bowl

Units Scale


  • 1/2 cup white vinegar
  • 1/4 cup vegetable oil
  • 1 tbsp maple syrup
  • 2 tsp fresh chopped dill
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper


  • 1 15 ounce can black beans, drained and rinsed
  • 1 15 ounce can red kidney beans, drained and rinsed
  • 1 15 ounce corn kernels, drained
  • 1 red pepper, diced
  • 1/2 red onion, rinsed
  • 1 avocado, diced
  • 1 jalapeno, deseeded and minced
  • 1/4 cup cilantro, chopped

Lime Crema

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime, juiced
  • 1 tsp tajin seasoning


  • 4 salmon fillets


  1. Whisk together all of the dressing ingredients and set aside.
  2. Place all of the salad ingredients in a bowl and fold together and add the dressing , refrigerate until needed.
  3. Mix together the lime crema ingredients.
  4. Sear the salmon fillets until cooked through.
  5. Place salad in a bowl, top with a salmon fillet and the lime crema. Enjoy!
