Dressing
- 1/2 cup white vinegar
- 1/4 cup vegetable oil
- 1 tbsp maple syrup
- 2 tsp fresh chopped dill
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
Salad
- 1 15 ounce can black beans, drained and rinsed
- 1 15 ounce can red kidney beans, drained and rinsed
- 1 15 ounce corn kernels, drained
- 1 red pepper, diced
- 1/2 red onion, rinsed
- 1 avocado, diced
- 1 jalapeno, deseeded and minced
- 1/4 cup cilantro, chopped
Lime Crema
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 1 tsp tajin seasoning
Salmon
- 4 salmon fillets
Instructions
- Whisk together all of the dressing ingredients and set aside.
- Place all of the salad ingredients in a bowl and fold together and add the dressing , refrigerate until needed.
- Mix together the lime crema ingredients.
- Sear the salmon fillets until cooked through.
- Place salad in a bowl, top with a salmon fillet and the lime crema. Enjoy!
