- Yield: Serves 2
Ingredients
- 2 tbsp olive oil
- 2 halibut fillets
- 6 slices prosciutto
- 1 tbsp olive oil
- 2 large shallots, sliced
- 12 cherry tomatoes
- 1/4 cup green olives
- 1/4 black olives
- 2 tbsp capers
- 1/2 cup white wine
- 1 tsp salt
- 1 tsp pepper
- fresh parsley
Instructions
- Preheat oven to 400
- Heat the 2 tbsp of olive oil in an oven proof pan.
- Wrap each halibut fillet with three pieces of prosciutto and sear in the olive oil.
- Transfer to the oven and cook for 10-12 minutes.
- Meanwhile heat the reminding olive oil, add the shallots , tomatoes, olives and capers, saute for 3-4 minutes, deglaze with the white wine and season with the salt and pepper.
- Remove the halibut from the oven, transfer to a serving dish and top with the olive mixture, garnish with the fresh parsley.
