Mediterranean Style Prosciutto Wrapped Halibut

Ingredients

  • 2 tbsp olive oil
  • 2 halibut fillets
  • 6 slices prosciutto
  • 1 tbsp olive oil
  • 2 large shallots, sliced
  • 12 cherry tomatoes
  • 1/4 cup green olives
  • 1/4 black olives
  • 2 tbsp capers
  • 1/2 cup white wine
  • 1 tsp salt
  • 1 tsp pepper
  • fresh parsley

Instructions

  1. Preheat oven to 400
  2. Heat the 2 tbsp of olive oil in an oven proof pan.
  3. Wrap each halibut fillet with three pieces of prosciutto and sear in the olive oil.
  4. Transfer to the oven and cook for 10-12 minutes.
  5. Meanwhile heat the reminding olive oil,  add the shallots , tomatoes, olives and capers,  saute for 3-4 minutes, deglaze with the white wine and season with the salt and pepper.
  6. Remove the halibut from the oven, transfer to a serving dish and top with the olive mixture, garnish with the fresh parsley.
