Lobster Quesadilla
This is an awesome way to stretch your lobster budget! 1lb of meat will provide lunch for 4 people, or serve these tasty quesadilla’s as an appetizer. Thanks to our friends at Logan’s Daily Catch for their awesome partnership.

Spread
- 4 oz cream cheese
- 1/4 cup Mayonnaise
- 2 tbsp lemon juice
- 1 tbsp chopped chives
- 1 tbsp chopped Dill
- 1/2 tsp salt
- 1/4 tsp pepper
Salsa
- 1 medium tomato finely chopped
- 2 green onions chopped
- 1/2 English cucumber diced
- 1/2 jalapeno pepper diced
- 4 mushrooms chopped
- 2 tbsp olive oil
- Juice of 1/2 lime
- 1 tsp salt
- 1/4 tsp pepper
- 4 floured tortillas
- 2 oz shredded mozzarella
- 2 oz shredded cheddar
- 1/4 red onion thinly sliced
- 1 lb lobster meat
Instructions
- Combine the ingredients for the spread and mix with a fork until smooth.
- Combine the salsa ingredients and gently toss.
- Divide the spread between two tortillas.
- Top with the chopped lobster meat, cheese, salsa, cheese and red onion.
- Top with a 2nd tortilla and grill until the tortillas are golden and the cheese has melted.
- Cut each into 6 pieces and serve 3 pieces per person.
