Lobster Fondue

Ingredients

  • 1/4 cup butter
  • 1 medium onion, minced
  • 1/4 cup flour
  • 2 cups whole milk
  • 1/4 cup white win
  • 2 tbsp chopped fresh dill
  • 1 1/2 cup grated Swiss cheese
  • 1 1/2 cup grated Gruyere cheese
  • Pinch of nutmeg
  • 8 ounces lobster meat, 1 cup finely chopped and remainder in chunks for dipping
  • 1/2 loaf of bread, cubed

Instructions

  1. melt the butter in a saute pan, add the onion and the flour and cook, stirring, until the flour is no longer raw and the onions have softened, 3-4 minutes.
  2. Slowly add the milk, stirring, until the sauce begins to thicken.
  3. Stir in the white wine and dill, stir to incorporate.
  4. Stir in the cheese and cook until the cheese melts and the sauce is smooth, stir in the nutmeg and 1 cup of lobster meat and stir to combine.
  5. Place the fonde sauce into a fondue pot with a sterno underneath.
  6. Serve with the chunks of lobster meat and bread for dipping.
