- 1/4 cup butter
- 1 medium onion, minced
- 1/4 cup flour
- 2 cups whole milk
- 1/4 cup white win
- 2 tbsp chopped fresh dill
- 1 1/2 cup grated Swiss cheese
- 1 1/2 cup grated Gruyere cheese
- Pinch of nutmeg
- 8 ounces lobster meat, 1 cup finely chopped and remainder in chunks for dipping
- 1/2 loaf of bread, cubed
Instructions
- melt the butter in a saute pan, add the onion and the flour and cook, stirring, until the flour is no longer raw and the onions have softened, 3-4 minutes.
- Slowly add the milk, stirring, until the sauce begins to thicken.
- Stir in the white wine and dill, stir to incorporate.
- Stir in the cheese and cook until the cheese melts and the sauce is smooth, stir in the nutmeg and 1 cup of lobster meat and stir to combine.
- Place the fonde sauce into a fondue pot with a sterno underneath.
- Serve with the chunks of lobster meat and bread for dipping.
