Intoxicatingly Delicious Drunken Mussels
- Yield: Serves 4
Ingredients
- 2 tbsp garlic butter
- 2 cups of celery hearts, chopped
- 5 lbs of fresh mussels
- Juice of 1/2 lime
- Handful of fresh herbs, we used parsley and dill
- 1/3 can Guinness Stout Ale
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Check over the mussels, remove any broken ones as well as any gapers.
- Melt the garlic butter over medium high heat.
- Add the celery and allow to soften for 1-2 minuts.
- Add the mussels. top with the lime juice, fresh herbs and Guinness.
- Cover, turn the heat to high and cook until steam begins to barrel from under the lid.
- Remove the mussels, set aside.
- Add the salt and pepper to the broth and reduce the broth by 1/3, pour over the mussels.
- Serve with crusty bread for dipping in the flavorful broth.
