Pork and Cabbage Soup: A Fall Hug in a Bowl

The first cool breeze of fall has a way of sending us straight to the kitchen, searching for something that will warm us from the inside out. While stews and chowders get plenty of attention this time of year, there’s something special about a bowl of pork and cabbage soup—light enough not to weigh you down, yet comforting enough to take the chill right off your bones.

A Simple Soup with Soul

This isn’t the kind of soup that needs hours on the stove to be good. In fact, it comes together quickly, but the flavor is anything but rushed. The pork brings a savory heartiness, while cabbage lends its natural sweetness as it softens into the broth. Add in aromatic notes of garlic, onion, and ginger, and you’ve got a base that feels both familiar and just a little exotic. It’s comfort food, but with a lift.

The Flavors of Fall in Every Spoonful

What makes this soup a true fall favorite is how it balances richness with brightness. The broth is soothing and savory, but there’s a little sparkle of tang and freshness tucked in, keeping things lively. The carrots add a pop of color and natural sweetness, while a garnish of green onions and sesame seeds gives each bowl a fresh, vibrant finish. It’s the kind of soup that warms your hands, fills your belly, and leaves you feeling nourished without being overstuffed.

Cozy Evenings, Quick Comfort

Life doesn’t slow down just because the seasons change, which is why a soup like this shines—it’s ready in less than half an hour. Perfect for weeknights when you want something homemade but don’t want to fuss. Ladle it into big bowls, add a slice of crusty bread if you’re feeling indulgent, and you’ve got dinner that feels like a reward for making it through a long day.

A Soup Worth Sharing

Like all the best fall recipes, this one isn’t just about food—it’s about connection. A pot of pork and cabbage soup bubbling on the stove is an invitation: gather around, shake off the cold, and share something warm and nourishing. Because at the end of the day, comfort food isn’t just about filling your stomach—it’s about filling your spirit.

  • Yield: Serves 4

Ingredients

Units Scale
  • 1 tablespoon sesame oil (or vegetable oil)
  • 1 lb ground pork
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups chicken broth
  • 1/2 small head of green cabbage, thinly sliced
  • 2 medium carrots, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar (optional, for a touch of tang)
  • Salt and pepper to taste
  • Fresh green onions and sesame seeds for garnish

Instructions

Cook the Pork:

  1. In a large pot, heat sesame oil over medium-high heat.
  2. Add ground pork, breaking it up with a spoon as it cooks, until browned and no longer pink, about 5-6 minutes.
  3. Add the onion, garlic, and ginger. Sauté until fragrant and the onions soften, about 3 minutes.
  4.  Pour in the chicken broth, then add the sliced cabbage, carrots, soy sauce, and rice vinegar (if using). Stir well and bring the soup to a gentle simmer.
  5. Let the soup cook for about 10 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning with salt and pepper. Serve and Garnish: Ladle the soup into bowls and garnish with fresh green onions and sesame seeds.
