Chilled Melon Gazpacho
When the summer heat arrives, few dishes are as refreshing and satisfying as a well-made gazpacho. While traditional versions rely on tomatoes, this melon gazpacho offers a delightful twist by showcasing the natural sweetness and vibrant flavour of ripe seasonal melon. Light, colourful, and incredibly refreshing, it is the perfect way to celebrate the best of summer produce.

What makes this dish so appealing is the balance of flavours. Sweet melon is paired with fresh vegetables, herbs, and a touch of acidity to create a chilled soup that is both elegant and approachable. The result is a smooth, refreshing starter that awakens the palate without being heavy, making it ideal for warm-weather entertaining.
Melon gazpacho is also wonderfully versatile. Serve it as an appetizer at a backyard gathering, present it in small glasses as a passed hors d’oeuvre, or enjoy a bowl as a light lunch on a sunny afternoon. Garnished with fresh herbs, crisp vegetables, or a drizzle of olive oil, it offers endless opportunities for creativity and presentation.

Whether you’re looking for a unique way to use seasonal melon or simply searching for a refreshing summer dish, this melon gazpacho is sure to impress. Its combination of bright flavours, beautiful colour, and effortless elegance makes it a recipe worth adding to your warm-weather repertoire.
