Sweet Meets Savoury: Grilled Pork Chops with Wild Blueberry Maple Sauce
Cooking with ingredients that reflect where you live always makes a dish feel more meaningful. Here in Atlantic Canada, wild blueberries and maple are two flavours that instantly say “home.” When paired with a beautifully grilled pork chop, they create something that feels both rustic and restaurant-worthy.
Pork has always been a great canvas for sweet and savoury combinations. Its natural richness works incredibly well with fruit, especially berries. Wild blueberries bring a deeper, more intense flavour than their cultivated cousins, and when they’re cooked down they create a sauce that’s both vibrant and comforting.

What really makes this dish stand out is the balance of flavours. The sweetness of maple syrup complements the berries, while cracked black pepper adds just enough warmth to keep the sauce from feeling overly sweet. A touch of butter gives the sauce a smooth finish and that glossy, luxurious texture that makes it perfect for spooning over grilled meat.
The pork chops themselves are simple but packed with flavour. A good seasoning blend and a hot pan with butter and olive oil help develop a beautiful crust while keeping the inside juicy. When done right, the chop becomes the perfect base for the rich blueberry sauce.
One of the things I like most about this dish is that it feels elevated without being complicated. It’s the kind of meal you could serve at a cozy dinner with friends, but it’s also easy enough to make on a weeknight when you want something a little special.
It also highlights two ingredients that deserve more attention in everyday cooking: wild blueberries and maple syrup. Both bring natural sweetness and depth without needing much else to shine.
The final result is a plate that feels unmistakably Maritime — hearty grilled pork, a vibrant blueberry sauce, and flavours that celebrate the land around us. It’s comfort food with a bit of elegance, and the kind of dish that reminds you how powerful simple ingredients can be when they come together just right.
If you love cooking with local ingredients, this is one of those combinations that will quickly earn a place in your regular rotation.

Grilled Pork Chops with Wild Blueberry Maple Sauce
Ingredients
- 2 pork chops
- 1-2 tsp Badass Burger Booster seasoning
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cups (500 mL) wild blueberries
- 1 tbsp olive oil
- 1 tbsp butter plus 1 tbsp butter to finish
- 1 shallot diced
- 1/4 cup (50 mL) maple syrup
- 10 turns milled black peppercorns
- 1/2 tsp sea salt
Instructions
- Sprinkle both sides of the pork chops with Badass Burger Booster seasoning.
- Heat a skillet or grill pan over medium high heat. Add the olive oil and butter. Grill the pork chops for about 3–4 minutes per side, depending on thickness, until nicely browned and cooked through. Remove from the pan and let rest.
- In a saucepan over medium heat add the olive oil and butter. Allow the butter to melt and start to lightly brown. Add the diced shallot, wild blueberries and maple syrup and stir to combine.
- Bring the mixture to a boil, reduce the heat and let simmer for about 4 to 5 minutes, whisking occasionally to break up the blueberries.
- Season with the black peppercorns and sea salt. Remove from the heat and whisk in the final tablespoon of butter to finish the sauce.
- Serve the grilled pork chops topped with the warm wild blueberry black peppercorn sauce. The sauce can also be made ahead of time and gently reheated before serving.
