Ingredients

Units Scale
For the pork chops
  • 2 pork chops
  • 1-2 tsp Badass Burger Booster seasoning
  • 1 tbsp butter
  • 1 tbsp olive oil
For the wild blueberry black peppercorn sauce
  • 2 cups (500 mL) wild blueberries
  • 1 tbsp olive oil
  • 1 tbsp butter plus 1 tbsp butter to finish
  • 1 shallot diced
  • 1/4 cup (50 mL) maple syrup
  • 10 turns milled black peppercorns
  • 1/2 tsp sea salt

Instructions

  1. Sprinkle both sides of the pork chops with Badass Burger Booster seasoning.
  2. Heat a skillet or grill pan over medium high heat. Add the olive oil and butter. Grill the pork chops for about 3–4 minutes per side, depending on thickness, until nicely browned and cooked through. Remove from the pan and let rest.
  3. In a saucepan over medium heat add the olive oil and butter. Allow the butter to melt and start to lightly brown. Add the diced shallot, wild blueberries and maple syrup and stir to combine.
  4. Bring the mixture to a boil, reduce the heat and let simmer for about 4 to 5 minutes, whisking occasionally to break up the blueberries.
  5. Season with the black peppercorns and sea salt. Remove from the heat and whisk in the final tablespoon of butter to finish the sauce.
  6. Serve the grilled pork chops topped with the warm wild blueberry black peppercorn sauce. The sauce can also be made ahead of time and gently reheated before serving.
