Bold Flavors on Flatbread: Za’atar, Feta, Tomatoes & Herby Yogurt

This recipe brings together the best parts of casual cooking: quick prep, full flavor, and ingredients that do real work on the plate. The base is a simple yogurt flatbread — no yeast, no rising time, just a fast dough that rolls out soft and cooks up golden and crisp on a hot skillet. It’s versatile, but here, it’s used to carry a combination that hits every note: salty, smoky, tangy, creamy, and fresh.

The toppings aren’t just thrown on. Thin red onion is cooked down until it’s soft and golden, bringing natural sweetness. Feta adds salty sharpness and a creamy crumble that works perfectly against the warm bread. Za’atar gives the whole thing a deep, herbal backbone and a touch of citrusy earthiness that plays off the richness of the cheese.

What really sets this flatbread apart are the blistered tomatoes and herby yogurt. The tomatoes are cooked hot and fast until their skins split and their flavor concentrates — they add brightness and acidity that cut through the fat. The yogurt is sharp with garlic and lemon, mellowed by fresh herbs, and finished with olive oil. It ties everything together and adds a cold contrast to the warm bread and toppings.

This isn’t a complicated dish, but it eats like something you’d get from a proper wood-fired oven or a lunch spot that knows how to balance flavor. It’s casual but considered — made to be eaten fresh and hot, but with components that can be prepped ahead if needed. Whether you serve it as a light meal, a shareable starter, or a centerpiece for a table full of small plates, it’s a dish that delivers without demanding much from you in return.

Ingredients

For the flatbread dough:
⦁ 1 cup (130g) all-purpose flour, plus extra for dusting
⦁ 1/3 cup (80g) Greek yogurt (plain, full-fat)
⦁ 1/2 tsp baking powder
⦁ 1/4 tsp salt
⦁ 1 tbsp olive oil
For the toppings:
⦁ 1 medium red onion, thinly sliced
⦁ 1/2 cup (100g) crumbled feta cheese
⦁ 2 tsp za’atar spice blend
⦁ Olive oil, for brushing
⦁ Salt, to taste
For the blistered tomatoes:
⦁ 1 cup cherry tomatoes
⦁ 1 tbsp olive oil
⦁ Pinch of salt
For the herby yogurt:
⦁ 1/3 cup Greek yogurt
⦁ 1 small garlic clove, grated
⦁ Juice of 1/2 lemon
⦁ 2 tbsp chopped fresh herbs (parsley, mint, cilantro — your pick)
⦁ Salt and black pepper, to taste
⦁ 1 tbsp olive oil (for drizzling)

Instructions

Make the dough:
1. Mix flour, baking powder, and salt in a bowl.
2. Add yogurt and olive oil. Stir until it forms a shaggy dough.
3. Knead on a floured surface for 2–3 minutes until smooth.
4. Cover and let rest 15–20 minutes (no yeast, so short rest is fine).
Prep the herby yogurt:
1. Mix yogurt, garlic, lemon juice, herbs, salt, and pepper.
2. Drizzle in olive oil. Chill until ready to use.
Blister the tomatoes:
1. Heat a skillet over high heat.
2. Add oil, then the cherry tomatoes.
3. Let them char and blister, shaking occasionally, about 5–6 minutes.
4. Hit them with a pinch of salt and set aside
Caramelize the onion (or quick-fry for a crispier hit):
1. In the same skillet, lower heat to medium.
2. Sauté onion in olive oil until soft and golden (8–10 mins). Salt lightly.
Roll and cook flatbreads:
1. Divide dough into 2 balls. Roll each into a ~8-inch round.
2. Brush with olive oil and sprinkle one side with za’atar.
3. Cook on a hot dry skillet, za’atar-side up, 2–3 minutes each side until golden and puffed.
Assemble:
1. Lay flatbreads za’atar-side up.
2. Top with caramelized onions and crumbled feta.
3. Add blistered tomatoes.
4. Drizzle generously with herby yogurt.

Optional: Finish with more herbs, a squeeze of lemon, or a chili flake hit if you’re bold.
