The Comfort of Cheesy Baked Haddock: A Cozy Seafood Classic

There’s something undeniably comforting about a baked dish that emerges from the oven golden, bubbling, and impossibly fragrant. Enter: Cheesy Baked Haddock. This dish is a harmonious marriage of tender, flaky haddock and a luscious cheese sauce that delivers all the cozy vibes of a comfort food classic with the added bonus of being an elegant seafood centerpiece.

At the heart of this recipe is haddock, a mild white fish that’s as versatile as it is delicious. It serves as a perfect canvas for rich flavors without being overpowering. If haddock isn’t readily available, don’t fret—cod or pollock can easily step in as worthy substitutes. The mildness of these fish varieties ensures they pair beautifully with the creamy, cheesy sauce that makes this dish truly shine.

Speaking of the sauce, it’s a revelation. A blend of Parmesan and mozzarella cheeses brings both nuttiness and stretch to every bite. The base begins with a classic roux, ensuring the sauce has just the right thickness to cling to each fillet. A touch of garlic adds aromatic depth, while a hint of thyme or fresh parsley brightens the dish with herbal notes. The finishing touch? A generous squeeze of lemon to cut through the richness and awaken your palate.

This Cheesy Baked Haddock recipe strikes a balance between indulgence and simplicity. With only 30 minutes needed from start to finish, it’s perfect for weeknight dinners when you’re craving something special but don’t want to spend hours in the kitchen. Serve it alongside roasted vegetables, a crisp green salad, or even some crusty bread to soak up that incredible cheese sauce.

Whether you’re a seafood enthusiast or simply looking to incorporate more fish into your meals, this recipe offers an approachable yet sophisticated option. The combination of creamy cheese and tender haddock will leave everyone at the table asking for seconds. Trust me, once you try this dish, it will become a regular in your dinner rotation.

  • Yield: Serves 4

Ingredients

Units Scale
  • 4 haddock fillets (about 6 oz each)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour (for thickening)
  • 1/4 teaspoon dried thyme or fresh parsley (optional for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
  2. Prepare the Haddock: Season the haddock fillets with salt and pepper. Place them in a single layer in the prepared baking dish.
  3. Make the Cheese Sauce: In a small saucepan, melt the butter over medium heat. Add the garlic and cook for about 1 minute until fragrant. Stir in the flour and cook for another minute to make a roux. Gradually whisk in the heavy cream, and cook until the sauce thickens slightly, about 2-3 minutes.
  4. Add the Cheese: Remove the saucepan from the heat and stir in the grated Parmesan and shredded mozzarella until smooth and melted.
  5. Season the sauce with a little more salt and pepper to taste.
  6. Top the Haddock: Pour the cheese sauce over the haddock fillets, covering them generously.
  7. Bake the Fish: Bake the haddock in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the cheese is bubbly and golden.
  8. Garnish and Serve: Garnish with fresh parsley or thyme, if desired. Serve with lemon wedges for a burst of freshness.
