  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour (for thickening)
  • 1/4 teaspoon dried thyme or fresh parsley (optional for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
  2. Prepare the Haddock: Season the haddock fillets with salt and pepper. Place them in a single layer in the prepared baking dish.
  3. Make the Cheese Sauce: In a small saucepan, melt the butter over medium heat. Add the garlic and cook for about 1 minute until fragrant. Stir in the flour and cook for another minute to make a roux. Gradually whisk in the heavy cream, and cook until the sauce thickens slightly, about 2-3 minutes.
  4. Add the Cheese: Remove the saucepan from the heat and stir in the grated Parmesan and shredded mozzarella until smooth and melted.
  5. Season the sauce with a little more salt and pepper to taste.
  6. Top the Haddock: Pour the cheese sauce over the haddock fillets, covering them generously.
  7. Bake the Fish: Bake the haddock in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the cheese is bubbly and golden.
  8. Garnish and Serve: Garnish with fresh parsley or thyme, if desired. Serve with lemon wedges for a burst of freshness.
