Ingredients
- 1/3 milk
- 1 large egg
- 1 lb. boneless skinless chicken breasts, cut into 1 ” cubes
- 1/4 cup potato starch
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp Hot Under The Kilt Acadian Cajun Seasoning
- 2 cups oil for frying
- 1/4 cup mayonaise
- 2 tbsp honey
- 2 tbsp sweet chili sauce
- 1 tsp sriracha sauce
Instructions
- Whisk together the milk and egg in a large bowl, add the chicken, toss to coat, let sit 30 minutes, drain and discard mixture.
- Combine potato starch, flour, and spices, pour into a resealable bag, add the chicken and shake until chicken is evenly coated.
- Heat the oil to 325, add the chicken in small batches and cook for 1 -2 minutes, remove to a paper towel lined plate, continue until all of the chicken is cooked.
- Mix together the mayo, honey, sweet chili and siracha, toss the chicken into the mixture and serve over steamed rice.
